Chicken Noodle Soup

This is the easiest way to prepare the most comforting meal of all time.

Ingredients

  • 1 1/2 lb. Breasts of boneless, skinless chicken
  • 1 large onion chopped
  • 3 carrots, peeled then sliced into coins
  • 2 stalks celery, sliced
  • 4 tsp. 4 tsp.
  • 4 tsp. 4 tsp.
  • 3 cloves garlic, minced
  • 1 bay leaf
  • Kosher salt
  • Freshly ground black pepper
  • 10 c. low-sodium chicken broth
  • 8 oz. 8 oz.

Instructions

  • Combine chicken, celery and carrots in a slow cooker. Season with salt and pepper. Add broth.
  • Cook on low for 6-8 hours. Take the chicken out of the slow cooker and mash it with two forks. You can discard bay leaf and herbs. Add egg noodles to the slow cooker.
  • Cook on low heat, covered, for 20-30 minutes or until al dente
